Let's not get into the science, but it is all to do with viscosity.
Our chocolate is the key to the flawless taste and texture of our bakes. We've invested a great deal of time to get it absolutely right.
The secret (although we have now let the cat out of the bag) is one of the authentic recipes created by Octaaf Callebaut, recipe no. 811 - Callebaut's iconic chocolate recipe, using beans sourced from The Ivory Coast, Ghana and Ecuador.
Recipe no. 811 has a round, extremely well-balanced chocolate taste, smooth cocoa body with a pleasant intensity, and a viscosity at melting point that gives our brownies that perfect fudgy centre.
